pilgrim time vs. spanish time

pilgrims--
5 or 6--out and walking
12-3--arriving at albergue, ready to wander the city
10--curfew

spanish--
9--awake and functioning
2-5--siesta
9:30--dinner served, life starts

it is difficult to reconcile these schedules.
